You should always have a KPI for your influencer gifting campaigns. They can either be sales driven (BOFU) or awareness driven (top of funnel):
Sales driven (bottom of funnel). Require you to give an influencer a link/discount code to attribute sales:

number of conversions
time spent on site
conversion rate
ROI / ROAS
Awareness driven (top of funnel):
reach
impressions
views
comments
likes
shares
If you are just getting started though, its best to set small goals:
Find 100 influencers in my niche
Contact them with personalized messages
Send 5 products to them
